SANITARY CANNING TABLES Owing to the various systems in use in different canneries, it has been practically impossible to standardize on a table that would be suitable for all purposes. In many respects, however, they are similar, all being built with a substantial iron frame, and usually equipped with a special cast iron enamel sink of our own pattern. Some of these tables are supplied with can carrying cables, and others are not, depending on the requirement of the canner. They can also be furnished in any length required. As a basis for quoting, we have adopted as a standard a 10-sink table, without can cable, but including fruit belt, water pipe, and faucets for each sink, then figure more or less from this basis, depending on the number of sinks. We own the patterns, and can furnish duplicates of any special tables we have made, some of which are illustrated here. Asparagus is usually harvested near the cannery, and being fresh and brittle a special table for handling this product without injury has been designed, in which the product is spread out so that it can be readily inspected by the canner. The sinks of these tables are usually made of special galvanized iron, and are very serviceable, and the tables can be made in any length desired. The regular equipment includes water pipe, faucets for each sink, combination drain and overflow connection. As soon as pears are peeled, they are placed in a salt solution to prevent discoloration until they are put in the cans, which requires a special table with double compartments, one in which the pears are placed in the salt solution at they come from the peelers, which is hinged to the frames in such a way thas it can be readily discharged to the clean water, as required by the canners. In certain classes of work the law requires that the employees be provided with suitable seats and foot rests, and those herewith illustrated are designed to meet the rulings of the Welfare Commission.
